It’s been a while since I’ve shared a home cooked meal, so here we go! I did my usual routine of slicing and pressing a package of extra firm tofu, then marinated it overnight in a tahini lemon dressing. Sauteed the tofu in a non-stick pan until the bottom was a light golden brown, then drizzled more tahini dressing, added a generous amount of lemon pepper, then let it cook for a few minutes.
I arranged sauteed onions and broccolini in a circle around some wild rice, then placed two slices of tofu on top. The tofu was firm on the outside, but super tender and juicy on the inside. Looks kinda like fish filets, doesn’t it?
