I’m back! You know I can’t stay away from tasty, affordable vegan food for long. My sister and I visited By Chloe for a breakfast of champions. There are so many things I would like to try here, so I’ll keep coming back and working my way through the menu.
I don’t understand how some places put barely seasoned avocado on sad looking bread and sell it for $12. At Chloe’s, the avocado toast is $7 and comes with fairly hefty toppings. The 7-grain toast is real tasty, and it was loaded with smashed avocado, roasted kuri squash, toasted pumpkin seeds, pomegranate drizzle, and almond parm. Colorful and oh so messy to eat.
Contrary to popular belief, I did not name one of my cats after the home of NYC’s best vegan mac and cheese ($5). Shells in a creamy and smooth sweet potato cashew cheese sauce topped with crispy shiitake bacon. Oh my! This is my favorite dish from By Chloe so far. I’ve experimented with various combos of cashews, cauliflower, squash, and corn when making vegan cheese sauce at home, but haven’t tried using sweet potatoes yet. I’ll have to take a cue from Chloe.

atThat avocado toast looks amazing! I haven’t tried it yet, but I keep hearing people rave about it. I have a perfectly ripening avocado sitting on the counter right now. I’ll see if I can give it a go :)
