Hope everyone is having a great Fourth of July weekend! What are your plans for the long holiday weekend? We don’t have major plans, just some relaxing and catching up on things around the apartment, plus a little bit of personal pampering. I got a mani/pedi yesterday and have a long overdue haircut scheduled for tomorrow. We will, of course, be having some burgers and Fourth of July goodies later today.
The photo above is of yesterday’s lunch. I love pasta, but there are days when hot pasta dishes just don’t feel right for summer. A chilled pasta salad is both refreshing and satisfying in the summertime. Whole wheat rotini pasta with romaine lettuce, red cabbage, onions, and tomatoes in a light ranch dressing. Good stuff!

atChilled pasta is great for the hot summers and yours look scrumptious! I had probably mentioned this before, our favorite pasta is blended silken tofu with green olives and sprinkled with a LOT of roasted cashew nuts. Yum!
