I recently made a batch of cheddar chive biscuits to bring to a summer house party. Instead of using my go to biscuits recipe, I decided to try this Serious Eats recipe, because it seems a little simpler, and I’m all for keeping things simple. Instead of scallions, I used a generous amount of fresh chives, which were quite delightful.
Unfortunately, I don’t think I’ll ever use that recipe as is again. The mixture was a sticky nightmare to work with, and I think it also needed more raising agent and a higher baking temperature. The final product tasted fine, but it was very dry and dense… more like a hockey puck than a flaky biscuit. At least they were good with honey iced tea or cold beer!

atSometimes you wonder whether all the recipes out there have really been tried and tested. I’ve had some strange incidences with cookies that weren’t even half baked after the time stated in the recipe and ingredients which just turn out to bee all wrong together:)

atYah, I’m always a little wary of baking recipes since baking is more of a science and so many things can go wrong! Didn’t expect a site like Serious Eats to have this issue though.
