Spring Greens Salad, Broccoli, Avocado, Cherry Tomatoes

Every once in a while, I’ll get a sudden, intense craving for a leafy green salad. I normally have salads for lunch on a pretty regular basis, but whenever I get this craving, I always make sure a salad is my next meal even if it means doing a last minute trip to the store. It’s the body’s way of telling you want you need, so you better listen up. One of my recent salad lunches was this plate of spring greens with broccoli, grape tomatoes, and sliced avocado. Just a light drizzle of balsamic vinaigrette as you really don’t need much dressing when you have perfectly ripe slices of creamy avocado on your salad!

    “It’s the body’s way of telling you want you need, so you better listen up.” – especially if it’s telling you to go for something health1 ;) Beautiful, simple and super yummy! I love avocado, but I’m currently avoiding it, because the last few times I had a bad luck of getting them, and while waiting to ripen, they turned black on me :( Not like they’ve become overripe, but like they were spoiled, although it didn’t show. Tricky little buggers! :)

      Avocados are always tricky like that, aren’t they? I’ve had them go bad on me too… always such a waste. One thing I miss about California is all the avocados! I remember being able to get them for as cheap as 69 cents each, and they were ready to eat immediately. Yum yum yum! :D

        Avocados ready to eat immediately? Sounds like a fairy tale! :D Although they are tricky, when you make some tasty guacamole, soup or creme… they are so worth the hassle! :)

          I was so spoiled by all the produce in California! ;) Oh yah, avocados are magical no matter how you prepare them.

    Really tasty-looking salad. I got a bit tired of steamed broccoli (it smells like farts, doesn’t it?), so I started eating it raw, and it’s so good and healthy:)

      Hahah, smells like farts, lol! Steamed broccoli is okay… not good when overcooked, but I love raw broccoli! Great texture and a nice crunch.

    That looks divine! If there is one thing that I am thankful, it is the fact that I don’t have to force avocado on the dinner table in my household. The boys love them in the form of guacamole and they’d eat that with everything! I wish they like broccoli the same way…

      Thanks! Avocado is the best, and it goes well with so many things. Have you tried serving them roasted broccoli with a little sprinkle of cheese? That’s usually a good way to convert anti-broccoli folks. ;)

        That’s a good idea! I’ll try that. I tried broccoli creamy soup with them, but the moment they found out it was broccoli, they passed after 2 spoonfuls. *sigh* I just hope they’ll pass this ‘I hate green’ phase soon ;)

          Let me know how it goes! Oh no, they didn’t like broccoli soup?! It’s one of my favorites and a good way to use up the stems, which can be kind of boring. Time to get creative to get them past this phase! ;)
