One of the things that I enjoy most is creating a delicious meal, not from any existing recipe, but inspired by the ingredients in my kitchen. That’s exactly how this tofu dish came together, and it’s perfect for warming you up on a cold winter’s day.
The tofu was sauteed to a light golden brown. I dissolved some miso paste in water before adding the baby bok choy and tofu to simmer for about 5 minutes. Added some soy sauce, scallions, and sesame seeds as a finishing touch. Trader Joe’s has miso paste in the same section as tofu. Bonus: it’s organic, vegan, and gluten free.
We served this tofu dish over Japanese somen noodles, and unfortunately, the broth was a bit too salty and had to be watered down with water used for cooking the noodles. Very satisfying, and all it needs is a little fine tuning!
