Cook up a big plate of food, then settle down for some <em>South Park<\/em> before going about our day. Normally, I would have a few stalks of asparagus or some other veggie on the side, but we were all out of fresh veggies, so this was, unfortunately, a very brown and beige meal.<\/p>\n<p><strong>Scrambled Tofu<\/strong><br \/>\nSince we stopped buying eggs for home cooking, we&#8217;ve started making scrambled tofu for some of our brunches. You can use soft or silken tofu, but if you&#8217;re using soft tofu, you&#8217;ll need to cut it into small cubes before scrambling. Spray a non-stick skillet with cooking oil, then cook over medium heat, turning frequently until light and fluffy.<\/p>\n<p>I usually season my tofu pretty aggressively with a mixture of cumin, paprika, cayenne, and nutritional yeast. Add salt and pepper too, of course. Nutritional yeast not only adds a subtle cheese-like flavor, but also adds a light yellow color to the normally sad looking, pale tofu. For this batch, we also added some colorful chopped peppers to the scramble.<\/p>\n<p><strong>Easy Home Fries<\/strong><br \/>\nCan&#8217;t believe I&#8217;ve never made home fries before! They&#8217;re incredibly simple to whip up at the last minute. I used <a title=\"Home Fries\" href=\"http:\/\/allrecipes.com\/recipe\/quick-and-easy-home-fries\/\" target=\"_blank\" rel=\"nofollow\">this recipe<\/a> for reference, but added half an onion and only used 2 tablespoons of margarine. I also added paprika because I&#8217;m a bit of a paprika fanatic.
