I\u2019m sure it\u2019s not hard to imagine how excited I was to discover <a title=\"Union Republic\" href=\"http:\/\/www.unionrepublic.com\/\" target=\"_blank\" rel=\"nofollow\">Union Republic<\/a>. Finally a good ramen restaurant on my side of the river! Located in the historic downtown area of Jersey City, UR is a New American cafe featuring ramen. It\u2019s clearly not your traditional ramen-ya, but the fresh, contemporary interiors immediately won me over.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-5801\" src=\"http:\/\/www.wazwu.com\/blog\/wp-content\/uploads\/2014\/10\/photo-33-444x600.jpg\" alt=\"Union Republic, Jersey City\" width=\"444\" height=\"600\" srcset=\"https:\/\/www.wazwu.com\/blog\/wp-content\/uploads\/2014\/10\/photo-33-444x600.jpg 444w, https:\/\/www.wazwu.com\/blog\/wp-content\/uploads\/2014\/10\/photo-33-768x1037.jpg 768w, https:\/\/www.wazwu.com\/blog\/wp-content\/uploads\/2014\/10\/photo-33.jpg 960w\" sizes=\"(max-width: 444px) 100vw, 444px\" \/><\/p>\n<p>Sunshine pours through the large storefront windows, and as long as you\u2019re not sitting directly in the sun, it\u2019s a really nice dining experience.\u00a0I\u2019ve always dreamed of having a farmhouse dining table lined with Eames eiffel chairs, so visiting UR was almost like a little glimpse into my dream house.<\/p>\n<p>Loved the green walls, and they also had some cool artwork up on the walls. Not too crazy about the stools at the bar tables, mainly because I suffered through 5 years of architecture school where we had to sit on those stools in studio for long hours. John and I both ordered the Alpha &amp; Omega ramen ($13), the vegetarian ramen at UR. It can be made vegan, which probably just means that they omit the egg. The broth seemed to be entirely made of veggies. I didn\u2019t bother asking the waiter if the broth was vegetarian. We\u2019re vegetarian, but the occasional meat based broth or trace of meat isn\u2019t a dealbreaker for us.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-5802\" src=\"http:\/\/www.wazwu.com\/blog\/wp-content\/uploads\/2014\/10\/photo-53-600x448.jpg\" alt=\"Vegetarian Ramen, Union Republic\" width=\"600\" height=\"448\" srcset=\"https:\/\/www.wazwu.com\/blog\/wp-content\/uploads\/2014\/10\/photo-53-600x448.jpg 600w, https:\/\/www.wazwu.com\/blog\/wp-content\/uploads\/2014\/10\/photo-53-768x574.jpg 768w, https:\/\/www.wazwu.com\/blog\/wp-content\/uploads\/2014\/10\/photo-53-1140x851.jpg 1140w, https:\/\/www.wazwu.com\/blog\/wp-content\/uploads\/2014\/10\/photo-53.jpg 1296w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/p>\n<p>Wild mushrooms, braised collard greens, sugar snap peas, roasted cauliflower, garlic, scallions, nori, and a soft egg. The noodles were a bit too firm at first, but once they had soaked in the broth for a few more minutes, they were the perfect al dente. Boy, do they pack a lot of noodles into these bowls! The veggies were fresh, colorful, and flavorful. The mushrooms and cauliflower were clearly the star here. The broth was tasty, heavy on the garlic, but I have no complaints about that.
