As much as I love savory foods, the menu was not complete without a dessert. I can&#8217;t remember the last time I&#8217;ve baked cupcakes&#8230; at least nine months, possibly over a year. And as for layer cake, goodness, it&#8217;s been a looooong time.<\/p>\n<p>I used this <a title=\"Chocolate Cake\" href=\"http:\/\/allrecipes.com\/recipe\/one-bowl-chocolate-cake-iii\" target=\"_blank\" rel=\"nofollow\">simple chocolate cake recipe<\/a>, which resulted in two good layers. The cake was actually more delicious the next day. Very moist and chocolatey. I made a basic vanilla frosting with 1 cup of margarine, 2-1\/2 cups confectioner&#8217;s sugar, and 1 teaspoon vanilla extract. Blended the margarine and sugar for 5 minutes, before adding the vanilla and blending for a extra minute or so. I probably should have chilled both the cake and frosting before assembly, but overall, it wasn&#8217;t too tricky and the top layer didn&#8217;t slide much.<\/p>\n<p>P.S. I recently bought some new cake pans! Having three identical cake pans means there will be more layer cakes in our near future. Yay! Also, I plan on adapting this chocolate cake to create a vegan version.
