That&#8217;s exactly how this tofu dish came together, and it&#8217;s perfect for warming you up on a cold winter&#8217;s day. The tofu was sauteed to a light golden brown. I dissolved some miso paste in water before adding the baby bok choy and tofu to simmer for about 5 minutes. Added some soy sauce, scallions, and sesame seeds as a finishing touch. Trader Joe&#8217;s has miso paste in the same section as tofu. Bonus: it&#8217;s organic, vegan, and gluten free. We served this tofu dish over Japanese somen noodles, and unfortunately, the broth was a bit too salty and had to be watered down with water used for cooking the noodles.
