I did my usual routine of slicing and pressing a package of extra firm tofu, then marinated it overnight in a tahini lemon dressing. Sauteed the tofu in a non-stick pan until the bottom was a light golden brown, then drizzled more tahini dressing, added a generous amount of lemon pepper, then let it cook for a few minutes. I arranged sauteed onions and broccolini in a circle around some wild rice, then placed two slices of tofu on top. The tofu was firm on the outside, but super tender and juicy on the inside.
