Vegan Dishes at Stacked Sandwich Shop, SE Portland

Stacked Sandwich Shop is no ordinary sandwich shop. This is the first time I’ve seen such an extensive bar menu at a fast casual eatery that specializes in sandwiches. At Stacked, chef Gabriel Pascuzzi, who comes from a fine dining background, offers a fresh take on old school sandwiches. Stacked opened just a few months ago, and their goal is to make the best damn sandwiches in Portland using locally and sustainably sourced ingredients. The bulk of the menu is meaty heavy, but the vegetarian sammies and sides can be made vegan upon request.

I was recently invited to sample the vegan offerings at Stacked Sandwich Shop. The truth is I’m not that big of a sandwich fan as many sandwich shops lack satisfying vegan and vegetarian options, and the bread can make or break a sandwich. Stacked preps all their ingredients in-house, and the bread comes from Pearl Bakery and Lovejoy Bakers, so rest assured it’s all good stuff here. I found myself nodding repeatedly as I sampled the two veggie sandwiches and made a mental note to come back soon for happy hour and another round of that tofu sammie.

The kale salad ($6 side, $12 entree) makes a good leafy side to your sandwich lunch. The kale, radicchio, apple, avocado, cucumber, balsamic and extra virgin olive oil come together nicely despite the lack of parmesan in order to make it vegan. I personally prefer my kale salads to be less tough and bitter (gotta massage those kale leaves!), so letting the salad sit for a while for the EVOO to work its way in helped.

The Korean fried tofu sandwich ($10) might be the best sandwich I’ve had in Portland so far. Instead of the brioche, mine is served on the soft, fluffy hoagie. I believe they had to omit mayo to veganize this sandwich, but the fried tofu is still fantastic with Choi’s kimchi. The tofu patty is juicy and tender with a light golden batter, which reminded me of a fish filet sandwich.

Pass on the smoked mozzarella to veganize the zucchini torta ($11). This one comes loaded with cremini mushrooms, pickled onions, salsa verde and avocado. What a delight to sink your teeth into those thick slices of fresh zucchini and bouncy mushrooms. I would love to see Stacked offer smoked tofu in place of the mozz for the vegan version of this sammie (or perhaps even a cashew mozz?!), but having just the veggies was still enjoyable.

Stacked Sandwich Shop goes above and beyond with their house potato chips that are hand cut on a daily basis. Out of the jalapeno, sea salt & malt vinegar, toasted pepper & sea salt, there’s no bad flavor here, but those malt vinegar chips were the ones that I kept reaching out.

    Got me thinking about vegan sandwiches too. Not sure that I’ve ever had one, but they have some nice vegetarian falafel sandwiches in Dubai:)
    The Korean fried tofu really looks delicious.
